 It seems everyone these days is trying to eat more organic, more local, and greener (in every sense of the word). Before you turn---Kafka-style--into a bunch of kale, take a deep breath and watch this ATC segment featuring local foodie Terry Walters. After which you should visit her encouraging, nonthreatening website. It includes seasonal recipes for Warm Greens with Citrus Dressing and Pomegranate and Ginger Pear Crisp.

And if you're looking for even more recipes, listen to Terry's interview with Faith Middleton from this past winter. If you're feeling particularly inspired, you can venture out to Urban Oaks Organic Farm in New Britain. Arugula, Spinach, Mustard Greens, Bok Choy and Rosemary are currently available.
