Rick Roger's dry brine turkey

I lived in Barbados 1970-80. Rubbing the poultry under the skin & in the cavity with chopped herbs, spices & salt and leaving it overnight was the common way of preparing savory, moist chicken. I find that carefully separating the connective tissue between skin & muscle to pack in the mixture allows the flavor to penetrate & reduce the amt of salt needed for flavor. When I use the bones & scraps for soup, it remains so tasty that I don't have to add any additional salt.
I loved a lot of the other recipes & look forward to being at a wi-fi site so I can download the program.
